
March 2024. There is that Asian Slaw with ginger dressing again. This time paired with grilled salmon with a honey mustard glaze and topped with beef bacon, and grilled zucchini and onion wedges. Of course you can top the salmon with pork bacon. I should have precooked the bacon before grilling. Otherwise, flavors were great together. Also paired with oven grilled green beans with French onion/panko breadcrumb topping.

February 2024. One of my favorites. Vietnamese wings, Asian slaw and garlic noodles. The Asian slaw was awesome, have been asked to make it again weeks later. The noodles were so easy to make, wing sauce was a marinade, and the slaw had so many ingredients I was chopping for what felt like hours, but so good.

May 2024 – Not sure what this dish is. I see mashed potatoes, probably with tons of garlic and butter. Black beans, some kind of chicken thigh dish and a Trader Joes bag salad.

July 2024 – Skillet Eggplant Parm. Man, I love eggplant. Added fresh basil from garden. Cannot remember what I paired it with, but it doesn’t matter could have been anything. Probably just a salad. August 2024 – Gnocchi Skillet with Green Beans and Asparagus. This one had lots of vegetables and garlic. I used two types of gnocchi that I bought from Trader Joes. One regular potato based gnocchi and the other made from cauliflower. I almost liked the texture and flavor of the cauliflower better. Both were really good. The combination of textures of the gnocchi and crisp of the green beans and asparagus made this dish. September 2024 – Caramelized Zucchini Pasta. Zucchini was in season. My dish did not turn out like the picture. The caramelizing process made for a mush, but don’t think that took away from the flavor. Not sure how I could have avoided that but would try this one again and figure it out. Maybe fry the zucchini more. I love dishes with zucchini and eggplant too much not to try this one again.
